🌿 Hyssop Herb – Hyssopus officinalis
Dried Hyssop leaf and flowering tops for loose herbal tea – fresh, minty and gently bitter, with a warm, sage-like finish.
Hyssop is a hardy, bushy member of the mint family, native to southern Europe, the Middle East and the lands around the Caspian Sea. Its narrow, aromatic leaves and spikes of deep blue-violet flowers have made it a favourite of cottage gardens – and of bees – for centuries. Our Hyssop is carefully dried to keep its colour and aroma, then packed by hand in the UK.
📜 A Little History
The name comes from the ancient Greek hyssopos, and the plant was well known to the Greeks and Romans. In medieval Europe Hyssop grew in monastery and physic gardens, was clipped into low hedges in knot gardens, and was used as a fragrant strewing herb, scattered across floors to freshen homes and halls. Its bold, aromatic flavour later found its way into the kitchen, into herbal teas, and into some of Europe’s best-known herbal liqueurs, including Chartreuse and absinthe.
🍵 Hyssop Tea Recipe
Classic Hyssop Tea (1 cup)
-
1 teaspoon dried Hyssop (about 1g)
-
250ml freshly boiled water, left to cool for a minute
-
Place the Hyssop in a tea strainer or infuser.
-
Pour over the hot water, cover, and steep for 5–7 minutes. A longer steep gives a stronger, more bitter cup.
-
Strain and enjoy warm.
Honey & Lemon Hyssop: brew as above, then add a slice of lemon and a teaspoon of honey to soften the bitterness.
Garden Blend: mix equal parts Hyssop, peppermint and lemon balm for a bright, refreshing everyday tea – lovely iced in summer.
